I think that Hitchcock did this because he emergencyed his movie to be besides focused on the bridge player rather than comely a hot actress. Since the stabbing was so sloppy it almost looked real, where in todays films every scary, murder scene looks so generic and computerized. All in wholly Psycho was a pretty decent movie.
